Sun Moon Lake Tea (Ruby 18)
Produced from the unique Ruby #18 cultivar, developed by cross breeding a wild Formosa tea plant varietal with a Burmese/Assam strain, this outstanding black tea hails from the Sun Moon Lake region in Nantou County, Taiwan. The long, dark, wiry leaves yield a complex, hearty liquor with a velvety smooth mouth feel. The fragrant aroma reveals layers of cinnamon, raisin, fig, vanilla, and plum, which harmonize with notes of bread pudding, baked apple, and a subtle malty hint in the full-bodied cup. Enjoy this recipe for a Peach Sky Spritzer Mocktail!
Ingredients:
- 3 grams (1 rounded tsp.) Peach Sky Black Tea
- 6 oz. water for preparation
- 6 oz. plain sparkling water
- 1 tsp. simple syrup
- Ice
- Fresh peach slices to garnish
Directions:
- Steep the tea leaves for 4 minutes in 6 oz. boiling water (212F).
- Pour into a tall glass and mix in the simple syrup.
- Allow to cool and add the sparkling water.
- Gently stir and add ice.
- Garnish with peach slices.
