Often referred to as the "champagne of teas," Darjeelings are prized for their delicate flavor and aroma; the liquor ranges in color from golden yellow to rich amber. Darjeeling teas can be floral, nutty, or even have delicate muscat notes, so there truly is a Darjeeling that will appeal to almost every taste. The steeping time and amount of tea used can be adjusted as a matter of taste.

 4. TD04: Arya Estate Ruby Second Flush (EX-40)
   This classic Arya gem is produced from tender leaves and buds, plucked on a clear, bright morning to assure optimum leaf quality. The leaves are then carefully rolled by hand to produce optimum quality and flavor in the finished product. The cup has a gentle briskness, and sweet raisin notes which linger in the finish.

 6. TD10: Season's Pick Steinthal TGBOP Organic
   A blend of select lots of Steinthal Estate broken leaf teas. The smooth cup has a dark golden amber hue with subtle fruity flavor notes. Steep for 1-1½ minutes for a very pleasant cup with a light, lingering, sweet finish.

 7. TD12: Arya Estate FTGFOP1 First Flush (EX-3) Organic
   A fine first flush tea, with a smooth, mildly sweet cup character. We recommend a 3-4 minute infusion with boiling water to produce an excellent liquor with a light, nutty flavor profile and a floral finish.

 9. TD14: Arya Estate SFTGFOP1 First Flush (DJ-3)
   This was one of the few mid-priced 2010 first flush Darjeeling teas that we found appealing. The cup is well balanced, with a mildly minty character and an interesting green pepper nuance. The lingering finish is sweet and well balanced.

   This selection has a well-balanced, golden-amber cup with a heady muscatel aroma. The sweet cup has a refreshing pungency and buttery quality which linger pleasantly on the tongue.
