The generous warmth and glow of summertime continue to surround us. Now, after a dazzling first flush season, the spotlight shifts as second flush Darjeeling takes the stage. The second flush season showcases teas that are rich and sweet, evoking the lusciousness of plump muscatel grapes. While there is far less astringency to be found, there is a deep vibrancy that lingers, complemented by a gentle effervescent on the tongue.
The second flush harvest occurs annually from late May through June, after a brief period of dormancy known as bhanji, when the tea plants pause new growth to replenish their energy. Just prior to this harvest, the plants enter a phase of accelerated growth due to rising temperatures, causing the leaves to become more robust and flavorful. Extended oxidation during processing enhances deeper coloration and full-bodied character for which second flush teas are prized. The oxidation process takes up to 2–3 hours, reaching about 60–70% oxidation.
A fascinating feature of this season is the intentional presence of tiny insects called leafhoppers. As they nibble on the leaves, the plant’s natural defenses kick in — producing special compounds that enhance the leaves’ aroma and flavor, especially those distinctive muscatel notes.

The name “Giddapahar” means “Eagle’s Hill,” a reference to the estate’s steep, mountainous location. Perched at elevations ranging from 4,500 to 5,200 feet, the Giddapahar Estate thrives in the cool, mist-laden air — ideal conditions for premium tea cultivation. Nestled along the southeastern slopes of the Himalayas, this estate's terrain — rising from 3,500 to 5,500 feet — contributes to the distinctive character of its teas. The Balasun River meanders through the lower elevations, while the Sukhia Forest Reserve cradles the upper reaches, creating a rich, diverse ecosystem. This 2025 election offers a rich, full-bodied cup with a pronounced muscatel flavor. Muscatel notes also emerge in the warm, toasty aroma, harmonizing with hints of apple and brown sugar. Notes of oak and nut pair gracefully with a nuance of earthy citrus, all lingering into a sweet, crisp finish.
Seeyok Estate Second Flush FTGFOP1 CL (2025 DJ-92) Darjeeling
The name Seeyok, from the Lepcha language, means "sand river," a nod to the sandy riverbeds. Established in 1869 by British planters, the Seeyok Estate is situated at elevations ranging from 3,000 to 6,000 feet, near the border with Nepal. Outstanding muscatel notes, present in both the fragrance and the smooth, rich cup, set the tone in this 2025 second flush offering. A light sprinkling of golden tips adorns the chocolate-brown leaves, which yield a dark amber liquor with a stone fruit sweetness that accentuates hints of spice and a nutty, toasty whisper. The finish lingers with a light sweetness that harmonizes beautifully with a crisp, dry wine-like nuance.

Second Flush Darjeeling Traditional Spritzer
Ingredients (1 serving):
- 2 tsp Second Flush Darjeeling loose leaf tea
- 6 oz filtered water (just off the boil)
- 2–3 oz chilled club soda or sparkling mineral water
- 1 tsp raw honey or simple syrup (adjust to taste)
- ½ oz fresh lemon juice (or lime for a zestier twist)
- Optional garnish: lemon or orange peel, mint sprig, or a few crushed Darjeeling grapes

Brew the Tea Base:
- Steep the Darjeeling tea in hot water (212°F) for 3 minutes.
- Strain and allow to cool to room temperature. Then chill in the fridge (or use ice to cool quickly).

- In a tall glass, combine the chilled tea, lemon juice, and sweetener.
- Stir until the honey or syrup dissolves.
- Add ice to fill the glass halfway.

Ingredients (2 servings):
- 3 tsp Second Flush Darjeeling tea
- 10 oz filtered water (just off the boil)
- ½ cup fresh peaches (thinly sliced)
- ¼ cup fresh raspberries or strawberries, halved
- 1 tbsp lemon juice
- 1 tbsp honey or agave syrup (optional)
- ½ cup chilled sparkling water (or more to taste)
- Ice
- Garnish: mint sprig, lemon wheel, or additional fruit slices
Brew the Tea Base:
- Steep the Darjeeling tea in hot water (212°F) for 3 minutes.
- Strain and allow to cool to room temperature, then chill in the fridge (or use ice if in a rush).
Infuse with Fruit:
- In a mason jar or pitcher, combine peaches, berries, lemon juice, and sweetener.
- Gently muddle the fruit to release its juices, but avoid over-mashing.
- Add the cooled tea and stir gently.
- Let it sit in the fridge for 15–30 minutes to infuse.
Serve:
- Fill two glasses with ice.
- Pour the fruit-infused tea over the ice, spooning in some of the fruit.
- Top with chilled sparkling water.
