White tea undergoes the least processing of any type of tea. When the young Camellia sinensis leaves that are destined to become white tea are delicately plucked, they are quickly air dried to remove all moisture. Because of this minimal processing and oxidation white tea yields a refined infusion that is naturally sweet.
