Japanese researchers created GABA tea serendipitously in the 1980's. Wanting effective methods to preserve tea, not fully oxidized leaf was exposed to nitrogen. The glutamic acid inherent in tea was transformed to Gamma-Aminobutyric Acid, or GABA for short.
