Green tea is a category of tea made from the unoxidized leaves of Camellia sinensis plant. Unlike other varieties of tea, green tea leaves are heated shortly after harvest to halt the oxidation process, usually by steaming or pan-firing. This process is what allows the leaves to retain their green character. It also results in a light-bodied cup when compared to other types of tea, such as black teas.
