Description: A fine selection with a fresh herbaceous and floral quality in the aroma. The liquor is reminiscent of a dry white wine, with a light grapey sweetness and a subtle dry pungent aspect. Harvested at sunrise for optimum flavor.
Steeping Suggestions: - Leaf Quantity: 2¼ g/cup Water Temp: 212° (boiling) Steep Time: 3 min.
"I steeped the leaves for 4 minutes in 190F water. As I sipped my first cup, I imagined the tea pickers threading their way through the fields at sunrise to pluck the leaves at the best time for optimal flavor. The aroma was quite vegetal at first, which then changed to a sweet floral fragrance. The flavor is silky smooth, very fresh, with pronounced floral notes and a hint of sweetness reminding me of a ripe pear. This is a very early spring harvest with a profusion of green leaf and downy tip."
